Easy Keto Buffalo Chicken Taquitos

There’s definitely a lot of directions you can go with this idea! Don’t be afraid to adapt it to your tastes.

INGREDIENTS

  • 1 1/4 cup shredded cheese, Mexican blend
  • 1/2 teaspoon ground cumin
  • 1 cup shredded chicken, cooked
  • 1/4 cup buffalo chicken wing sauce
  • fresh chopped cilantro (optional garnish)

DIRECTIONS

1: Preheat oven to 400 degrees.

2: Cover a baking sheet with parchment paper or a silicone mat.

3: Season shredded cheese with cumin.

4: Make 6 small circles of cheese on the baking mat. Bake for about 6 minutes until edges are browned.

5: Remove from the oven and let cool for a minute or two.

6: In a small bowl, mix wing sauce with warmed up, shredded chicken.

7 : While still warm and bendable, flip shells over, add shredded chicken to the middle and roll it up. Continue with each of them. Place on a plate.

8 : Garnish with chopped cilantro if desired. Makes 6 taquitos. Nutritional information is for one taquito.
