Keto Lasagna Roll Ups
1 Can Palmini lasagna noodles
½ lb. Ground beef
½ C. Ricotta cheese
½ + ⅓ C. Mozzarella cheese
1 tsp. Minced garlic
½ C. Keto friendly low carb marinara sauce
Salt and pepper to taste
Preheat the oven to 350 degrees.
Drain, rinse and soak the palmini noodles while preparing the filling.
Cook the ground beef in a skillet on the stove over medium-high heat until completely browned.
Add the minced garlic to the pan as well as salt and pepper to taste, and cook for an additional 30 seconds.
Place the meat mixture into a mixing bowl, and add the ricotta and ½ cup of the mozzarella cheese. Mix until well combined.
Drain the palmini noodles again.
Lay a palmini noodle on a flat surface, and place a thin layer of the filling down the center of it. Gently roll it closed over the filling.
Place a layer of sauce into the bottom of a 9×9 casserole dish.
Layer the lasagna roll ups on the layer of sauce in the dish.
Top the roll ups with more of the marinara sauce, and sprinkle the remaining ⅓ cup of mozzarella cheese on top.
Bake the roll ups for 20-25 minutes until the cheese is melted and browned slightly on top.
