Keto French Toast For Beginners…
1 cup of salted or unsalted macadamia nuts (if not salted add some salt 2 cups of coconut shavings(unsweetened) 2 tbsp of lemon juice 5 eggs 1 1/2 tsp of baking soda
There are a bunch of videos talking about making this macadamia nut bread but they say to use coconut butter but I have found that using coconut shavings gives more fluff to a loaf but it does make a runnier dough so don’t worry if it is. Using a food processor blend up macadamia nuts and the coconut shavings. The more you blend these two ingredients up the denser the bread will be. After they have blended add the rest of the ingredients. Once all blended oil a loaf pan and cook at 350 for around 40 mins. Use a toothpick to tell when it’s ready.
For the batter 2 tbsp of heavy cream 1 egg 1 tsp of cinnamon 1/4 tsp of nutmeg 1/2 tbsp of baking monkfruit (this sweetener works the best IMO) I usually like to add a little water
Blend up these ingredients to make a batter and soak the bread in them. I usually cut around 1.5-2.0 oz slices from the loaf. The nice thing about this is that you can cook the loaf ahead of time and cut the slices when you are cooking. The loaf lasts a while and can be frozen.
