                  Keto Snickers Cheesecake

INGREDIENTS:

crust:

3/4 cup super fine almond flour

3 tablespoons erythritol or granular sweetener

1/4 cup unsweetened cocoa powder

1 pinch salt

1 teaspoon vanilla extract

1/4 cup butter

 

caramel sauce:

1/4 cup butter

1 tablespoon erythritol or granulated sweetener

1 teaspoon vanilla extract

pinch of salt

2 tablespoons heavy whipping cream

 

filling:

12 oz cream cheese, softened

6 tablespoons erythritol or granulated sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 sachet of gelatin to 200ml hot water

 

peanut layer:

2 tablespoons of peanut butter

1 tablespoon hot water

 

chocolate sauce:

1/3 cup 85% dark chocolate

1 tablespoon heavy whipping cream

1/3 cup salted peanuts, or almonds if Keto

 

METHOD:

 

1. In a large bowl add all crust ingredients together (apart from vanilla and butter). Melt the butter and add vanilla in a separate bowl. mix together with the dry crust ingredients. It should make a dough, place into a cheesecake spring form tin around the outside and on the bottom. If you have a larger springform repeat last steps to create more dough. place in fridge to set (recommended to set for at least 2 hours for it to harden, you don’t want a soggy bottom)

 

2. In the meantime melt the butter and Erythritol together in a medium-large saucepan over low heat for about 3-4 minutes , stirring occasionally, until golden brown.

Add the cream. Bring to a gentle boil. Reduce heat to a simmer for 7-10 minutes, continuing to stir occasionally, until the mixture is a caramel color and thick enough to coat the back of a spoon. Remove from heat and stir in the vanilla extract.

 

3. Best to be made when the base has set. In a small bowl add the peanut butter and hot water together, stir to make a thinner consistency. spread this mixture to the bottom of the base to create the first layer. place in fridge to set.

 

4. In a bowl mix all of the filling ingredients together. Starting with the philadelphia, cream, sugar and vanilla. whip together until smooth, slowly add in gelatin mixture. pour onto the base to create the next layer. set completely.

 

5. add the caramel sauce to the top of the pie, leave to set. and decorate with nuts on the top after.

 

6. make the chocolate sauce by slowly heating chocolate and whipping cream together (30 seconds in microwave, leave for 10. then another 30 seconds back in) drizzle on the top of the cheesecake.
