Keto Taco Skillet!!


Ingredient List

egg 1.5
onion 1.5
zucchini 1.5 cup
crème fraîche 1.5 tbsp
taco seasoning 3 tbsp
diced tomatoes 1.5 can
lean ground beef 0.8 lb
shredded cheddar 2.2 cup
crushed red pepper 1.5 tsp
Cooking Steps
Step 1 / 4

Dice the onion and grate the zucchini.

Step 2 / 4

In a large skillet, sauté the onion and cook the ground beef until browned, stirring occasionally. Stir in the zucchini and taco seasoning.

Step 3 / 4

Whisk the egg. Stir in the canned tomatoes and the egg. Cook for about 8 minutes.
Step 4 / 4

Add in the shredded cheese. Garnish with a dollop of crème fraîche and crushed red pepper. Serve.

Note: If you can’t find low carb, no added sugar etc. canned diced tomatoes, then a good substitute is dicing 1 large (or 2 medium) tomato(es) and adding a bit of tomato paste to taste.
