Lemon Butter Chicken


This Lemon Butter Chicken recipe is keto friendly, low carb, very easy to make and delicious.


2-3 large chicken breast cut in half or 4-6 smaller breast.
1 tbsp. olive oil
4 oz. butter
1 tsp salt
1 tsp pepper
1 tsp lemon pepper seasoning
1 tsp chili powder
1 tsp paprika
4 cloves garlic
1 cup chicken stock
½ cup heavy whipping cream
½ cup parmesan cheese
1 tsp dried thyme
juice of one lemon juice
2 cups spinach
2 cups kale


Heat up the skillet over medium high heat with olive oil and butter. Place the chicken into the pan and season both sides with salt, pepper, lemon pepper seasoning, chili powder and paprika. Cook the chicken for about 6-7 minutes turning often. Remove the chicken from the pan and add in the chopped garlic and additional butter. Next add in chicken stock and heavy whipping cream to deglaze the pan. Allow the sauce to reduce for 2-3 minutes. Add in the parmesan cheese and dried thyme then mix to combine. Then add the chopped spinach and kale to the pan and allow for it to wilt down this should take 1-2 minutes. Next lower the heat to medium add the chicken back to the pan along with any juices and allow all flavors to combine and the spinach and kale to wilt down for 5 minutes. Enjoy
